Chicken Parmesan

Chicken Parmesan RecipeIngredients:

4 individual chicken breasts (boneless and skinless)

1 cup flour with a pinch of salt and pepper added

2 eggs

2 tablespoons water

1 cup bread crumbs

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

8 oz. Mozzarella cheese, sliced

1 1/2 cups Basic Tomato Sauce

Prep Work:

The prep for this dish is easy. Preheat the oven to 350 degrees F.

Next, pound the chicken breasts with a meat mallet until they are approximately 1/4 – 1/2 inch thick.

Have your Parmesan cheese grated and on the ready.

Finally, slice the Mozzarella cheese into 1/8 to 1/4 inch slices.

Steps To Make The Dish:

1. Whisk the eggs and water together in one bowl and stir the Parmesan Cheese into the breadcrumbs in another bowl.

2. Keeping one had for dry ingredients and the other for wet ingredients; dredge the breasts in the flour coating sides, then the egg/water mixture, and then the parmesan/breadcrumb mixture.

3. Sauté the breasts in the olive oil for one minute on each side in an ovenproof sauté pan until the breasts are golden brown. Don’t over crowd the pan or your chicken breasts will steam and not sauté properly. (If you don’t have an oven proof sauté (frying) pan, sauté in your pan and transfer to a casserole dish.

4. Remove from heat, cover the breasts with basic tomato sauce and top with slices of mozzarella.

5. Cook in oven until the chicken is done approximately 10 to 20 minutes depending on the thickness of the chicken breasts.

6. Remove from oven and serve.

Best Served with:

Side- Spaghetti topped with any basic tomato sauce

Dessert- Tiramisu

Wine- Merlot

 

Stir Fry

Beef Stir Fry RecipeIngredients:

1 tablespoon cornstarch

1 tablespoon brown sugar

3/4 teaspoon ground ginger

1/2 teaspoon chili powder

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1/2 cup cold water

1/4 cup soy sauce

2 tablespoons canola oil

1 pound sirloin steak, cut into 1/2-inch cubes

1 (16 ounce) package frozen stir-fry vegetable blend, thawed

Steps To Make The Dish:

1. Whisk cornstarch together with brown sugar, ginger, chili powder, garlic powder, black pepper, water, and soy sauce in a bowl.

2. Pour 1 tablespoon oil into a large skillet or wok and set over high heat. Cook beef in the hot oil for about 4 minutes, until beef is cooked through. Transfer to a plate and cover with foil.

3. Pour another tablespoon of oil into the skillet. Cook vegetables in hot oil for about 5 minutes, until cooked through and tender with a little bite left.

4. Pour the cornstarch/soy sauce mixture into the skillet. When it comes to a boil, cook for 2 minutes to thicken. Return beef to the skillet. Cook for 1 or 2 more minutes, just until the beef is hot. Serve.

Best Served With:

Side- Serve over your choice of pasta or rice

New York Strip Steak

New York Strip Steak RecipeIngredients:

2 New York strip steaks

1 Tablespoon Montreal Steak Seasoning

1 Tablespoon Light Brown Sugar

1 Teaspoon Onion Powder

1/2 Teaspoon Oregano

Olive Oil

Steps To Make The Dish:

1. Get out your mixing bowl and combine the four spices Montreal Steak Seasoning, light brown sugar, onion powder, and oregano.  Mix them together well with a fork or a whisk.

2. Now place your steak on a serving platter or baking dish.  Rub in the spices into the steaks and then place some olive oil over the rubbed in spices.  Then flip the steaks over and repeat.

3. Wrap the steaks up with some plastic wrap and place them into the fridge and to marinate for at least 30 minutes.  You could begin cooking them right away but if you marinate them some the flavors will really begin to take in the steak.

4. After the steaks have marinated it is time to do some grilling.  Preheat the grill on high for about 10 minutes.  Now when I grill I like to spread some olive oil onto the cooking grates so what ever I am cooking will not stick to the grill.

5. Grill your steak for 4 to 5 minutes on each side turning only once.

Temperatures for steaks:

Rare – 120 – 125 degrees

Medium Rare – 125-140 degrees

Medium / Medium Well – 145 – 155 degrees

Well Done – 160 degrees

Side- Baked Potatoes

Wine-  Carmenere

 

Fettuccine Alfredo

Fettuccine Alfredo RecipeIngredients:

8 ounces fettuccine pasta

1/2 cup whipping cream

1/2 cup butter

3/4 cup grated parmesan cheese

1/2 teaspoon salt

1 dash pepper

1 teaspoon parsley

Steps To Make The Dish:

1. Cook noodles according to package. Drain and keep warm.

2. In a medium-sized saucepan, heat butter and whipping cream over low heat, just until melted. Stir to blend.

3. Stir in cheese, salt and pepper.

4. Pour sauce over hot noodles. Sprinkle with parsley and serve.

Best Served With:

Side- Caprese Salad

Dessert- Simple Fruit Salad

Wine- Chardonnay

 

Filet Mignon

Filet Mignon RecipeIngredients:

2 (8 ounce) beef tenderloin steaks, cut 1.5-2 inches thick (about 1 pound total)

2 teaspoons olive oil

1/4 teaspoon onion powder

Salt and pepper to taste

2 tablespoons minced shallot

2 slices bacon

Steps To Make The Dish:

1. Place oven rack in it's highest position. Set oven to Broil.

2. Rub steaks all over with olive oil. Sprinkle with onion powder, then with salt and pepper. Wrap one slice of bacon around each steak, and secure with a toothpick.

3. Place steaks onto a broiler pan, and broil for 5 to 7 minutes. Turn the steaks over, and sprinkle the tops with shallots. Broil for an additional 5 to 7 minutes, or until the steaks are cooked to your liking.

Best Served With:

Side- Grilled Asparagus

Dessert- Banana Foster

Wine- Bordeaux Blend (Red)
